Quick and Delicious Polish Street Food
- 1 slice French bread, or we used sourdough
- Sliced mushrooms
- Mozzarella cheese
- Plain ketchup or Sriracha
Special thanks to Bart Szewczyk, my friend who introduced me to this popular Polish pizza-like sandwich. He’s a great cook, and one of the most metal people I know.
Traditional – Slice and saute the mushrooms to allow them to moisten the bread a bit. I often just slice the mushrooms, especially if making it for kids.
In a toaster oven, toast close to the heating element. Pizza ovens can approach 1000°F, so we’re trying to substitute for that. If you don’t have a toaster baking at 400°F for about ten minutes should do it.
Finish with ketchup or Sriracha and enjoy. You can add onions if you want, artichoke or anything. That breaks from tradition but it’s yummy!
College students in Poland love this, and it’s sold by street vendors everywhere. It’s surprisingly savory and deceptively simple, which is why it’s such a great snack! Best of all it’s relatively healthy depending how you prepare it, add salt, etc.
