Pack in Protein with Practically Zero Carbs
- 1/2 head cabbage
- Dried pepper, we use Ancho chili
- Grape seed or peanut oil, grapeseed is healthier
- Low sodium soy sauce
Wash and chop cabbage, set aside.
Start a wok or fry pan on a hot burner. Add 1 TSP oil (I use grapeseed) and with scissors chop small amount of pepper, fry until brown. Pepper is now infused in oil and will flavor your cabbage nicely. Add chopped cabbage and cook until soft.
This Chinese recipe stops here! If you want, you can just eat the cabbage by itself. Adding eggs takes it to a whole new level, and eggs are a great way to add protein.
While cabbage cooks, get a medium-high pan going with a light spray of oil. Stir cabbage. Crack eggs and garnish to taste with dry cheese like parmesan, salt and pepper, or whatever you like.
I prefer an easy-medium yolk for more of a sauce but feel free to experiment. I find an easy-cooked yolk folds nicely into cooked cabbage.
